Cottage cheese dumplings
It is widely known that cottage cheese is rich in vitamins, minerals, and trace elements, but fewer people know that it can also help reduce anxiety. Lower-fat varieties fit easily into various diets, and it is also an excellent source of vitamin B12, supporting brain development and metabolism. Mixed into a cream and eaten with Abonett bread, it can even help lower cholesterol levels.
Ingredients for 4 servings
- 8 slices of Abonett buckwheat extruded bread
- 500 g organic cottage cheese
- 3 eggs
- 60 g spelt semolina
- 50 g cane sugar
- 150 g organic sour cream
- Zest of 1/2 lemon
- 2 tablespoons organic elderflower cordial
Preparation
Press the cottage cheese through a sieve or blend until smooth using a hand blender. Start by mixing in a third of the sugar, then add the remaining ingredients. Cover and leave to rest in the fridge for at least one hour. Shape into evenly sized dumplings and cook in boiling water for 6–8 minutes. Blitz the Abonett in a food processor and roll the cooked dumplings in the crumbs. Serve with sour cream mixed with elderflower cordial and fresh fruit.
