Green pea pesto
Green peas are rarely used outside of classic recipes, yet they have a beautiful colour and are highly nutritious. They don't have the high carbohydrate content of dried legumes, but they are rich in fibre, which benefits both digestion and blood sugar levels.

- 8 slices of gluten-free vegetable extruded bread
- 200 g canned organic green peas
- 2 cloves of organic garlic
- Salt
Preparation
Fresh green peas can also be used — in that case, cook until tender. Frozen peas simply need to be thawed.
Blend the peas together with the garlic and salt. Those who prefer a richer flavour can add a drizzle of oil, which makes the spread creamier and more filling — though it is healthier without. Mint or basil are great additions too, as both pair very well with peas.
